750g Chicken Breast Diced
2 Tbsps Vegetable Oil
75g Onion, chopped
2 Chicken Stock Cubes
2 Cloves Garlic, minced
1 Tablespoon minced ginger
2 tsps.Ground Cinnamon
1½ Teaspoons Ground Cumin
½ Teaspoon Turmeric
300g Carrots, peeled & sliced
250g Raisins
1 Can Chickpeas (garbonzo beans)
1.5 Litres Water Method: In heavy large nonstick saucepan, place olive oil over high heat. Add chicken and cook about 10 minutes, turning to brown on all sides. Stir in onion, garlic, ginger, carrots, chickpeas, raisins, cinnamon, cumin, tumeric and water. Bring to a simmer, reduce heat and cook about 30 minutes. Serve with Rice.
